For the first time this year, we will host an event away from our kitchen and we’ll travel to the outskirts of Paris for a wonderful Boulangerie Masterclass with Chef Guillaume Felez and our partner Moulin Paul Dupuis.
Elevate your baking skills with Chef Guillaume Felez on this hands-on masterclass and learn how to make the perfect small breads and hotels and restaurants.

- Mastering Leavened Doughs: Delve into Chef Felez’s expertise with natural leavens, focusing on fermentation control and enhancing texture. Learn advanced hydration techniques and the use of unique grains to achieve the perfect dough consistency and crumb structure.
- Seeded Breads & Specialty Flours: Explore the art of incorporating seeds and specialty flours to bring out depth of flavour and texture, a technique Chef Felez refined in Norway. Participants will practice handling different seed ratios and learn flavour pairings that create memorable artisan breads.
- Fine-Tuning Fermentation: Understand the science behind fermentation to control flavour development and improve dough strength, from pre-ferments to extended fermentations, for a richer taste and improved shelf life.
- Artisan Bread Presentation: Chef Felez will also cover advanced scoring and shaping techniques, adding aesthetic appeal to your breads with intricate designs that elevate their visual appeal.
